Balearic Islands, Spain - 85% Callet (75% selected and 25% clonal selection), 15% Manto Negro, produced by Eloi Cedó (Vinari System) in Mallorca, in the Felanitx and Consell area. Plots with red calcareous-clay soils, very rich in iron and located between 100 and 200 meters above sea level. Organic viticulture.
Hand-harvested by plot, destemmed from 50% to 75% depending on the type of tank, maceration for 15-20 days with daily foot treading, alcoholic fermentation with native yeasts in plastic, concrete, and stainless steel tanks, gentle pressing. It then rests for 5 months in stainless steel and concrete tanks and a further 6 months in the bottle before release. The wine is not clarified, filtered, or treated with sulfites. 12.5% Alc.
